Blueberry Ricotta Toast with Hot Honey

Gone are the days of boring toast toppings! Once you make this Blueberry Ricotta Toast, you’ll never look back. The perfect breakfast or mid-afternoon snack, this recipe combines seasonal blueberries on a creamy base, topped with hot honey for a sweet, spicy and tasty treat.

Blueberry cheesecake has always been a weakness of mine, so when I first made this recipe, which essentially combined all of the elements of a cheesecake - a crunchy base, creamy topping, blueberries, and drizzles of honey for sweetness, I was sold.

You might think I’m going rogue with the hot honey, but there’s something really enjoyable about the subtle heat paired with juicy blueberries that just works - you’ll have to trust me on this one.

Flaky salt and walnuts add a beautiful crunch, and the whole thing is a marvellous play of textures and flavours that come together in every delightful bite.


Ingredients

  • 1/2 cup fresh blueberries

  • 4-5 tbsps smooth ricotta

  • 2 tbsps. honey

  • 1/2 tsp chilli flakes (adjust according to taste)

  • 1 tbsp walnuts - crushed and lightly toasted

  • Pinch of flaky salt

  • 3-4 sourdough slices

Method

  1. Combine the honey and chilli flakes in a small bowl.

  2. Microwave for for 20 seconds and stir to combine. Set aside to infuse.

  3. Toast the sourdough to your liking and spread generously with ricotta.

  4. Top with fresh blueberries (I like to halve mine so they don’t roll around).

  5. Give the honey a good stir, then drizzle on your toast.

  6. Sprinkle with flaky salt and crushed walnuts (if using). Serve immediately.

    Peaches, strawberries or blackberries would be a great alternative to blueberries in this recipe.
