Hot Honey Halloumi Sandwich

This sandwich recipe has got to be one of my favourites! Thick slices of golden, pan-fried halloumi in a soft Turkish roll, with creamy avocado, crunchy green apple and peppery rocket playing the supporting roles.
The halloumi is pan fried in hot honey which gives it a delicious, caramelised crust. It’s an addictive combination of sweet, sticky and salty that will leave you coming back for more.
How to make my Halloumi Hot Honey Sandwich -
This sandwich recipe is all about building layers that add contrasting textures for the perfect bite.
Start by pan frying the halloumi in hot honey - I use the hot honey from a Sydney based brand called Soka Pantry which has lovely, crunchy bits all through it. In case you can’t find hot honey, I’ve included the recipe in my notes* below.
Smashed avocado acts as the creamy base, and green apple slices add crunch and texture. I like to top it all with a handful of rocket which gives the halloumi sandwich a fresh, peppery bite.
As with any sandwich, use my recipe as a guideline but feel free to adjust the quantities to your taste. I like the soft texture of Turkish bread, but you can use Focaccia, ciabatta or soft dinner rolls instead.
Ingredients
1 avocado
2 soft rolls (I used Turkish bread)
1 pack of halloumi (around 225 gms)
2 tbsps. hot honey (plus extra for drizzling)
1/2 green apple, sliced thin
Handful of rocket
Squeeze of lemon juice
Salt and pepper, according to taste
Method
Cut the halloumi into thick slices and pat dry with a paper towel.
Heat a pan large enough to fit the slices in a single layer, then fry the halloumi.
Drizzle with 1 tablespoon hot honey and fry until golden brown. Flip and repeat on the other side.
In the meantime, mash the avocado until smooth with a squeeze of lemon, salt and pepper.
Toast the bread and spread with the smashed avocado.
Layer the halloumi, drizzle with more hot honey if desired, then add the apple slices and rocket.
Place the other slice of bread on top and serve right away.

I’d suggest eating this sandwich within a few hours of making it as the avocado will start turning bitter the longer it sits. For eg. if you’re making it in the morning, I’d eat it by lunchtime. The sandwich doesn’t reheat well, so eat I’d recommend eating it fresh.
